Stainless San Mai chef
This blade is forged with all stainless steel. The core is AEB-L and the cladding is 304 alloy. This is a difficult and rare technique but gives a traditional look without the discoloration and patina. The handle is made from linen micarta and stabilized lightning struck oak. The cutting edge is 8 5/8” and the knife is 14 1/2” overall.
